Orsi San Vito
Nestled in the hills overlooking Bologna, the vineyards of Orsi San Vito are nearly 50 years old. The 15 hectares of vines were taken over in 2005 by a young couple with a view to rejuvenating the estate and the image of the region’s wine.
Key to their vision was creating wines that clearly expressed the terrain - something that seemed to be lacking in this area called Oliveto, which has been long overlooked. The vineyard is biodynamically certified, with strictly no fertilizes applied and no irrigation. A similar method is embraced in the cellar with spontaneous fermentation and the strict exclusion of clarification and filtration.
Their concept has always been that by intervening less there is greater opportunity to express the regional style and the unique flavours can be best exemplified.
