Jacopo’s project is all about old vineyards on the hills around Bologna and Modena. The vines are up to one hundred years of age and grow amongst woods and orchards, going back to a tradition of Italian agriculture of co-planting many different varieties together as other fruit trees.
This wine is a field blend of over dozen white grape varieties picked, fermented together and aged in terracotta amphoras, with a little flor of yeasts giving nuttiness on the top of minerality and salinity.
Service tips: Serve at 10 C, something anchiovies or an aged Parmigiano Reggiano Vacche Rosse.
