GDM Fun Dining Series
To celebrate the end of summer, Giorgio De Maria of Fun Wines will join forces with chef friends and Cristiano Guttarolo to bring a taste of Puglia to Australia.
The latest in Giorgio’s itinerant series of Fun Dining, the gang will host lunches and dinners in Melbourne (in collaboration with Andreas Papadakis, Alberto Fava and Luke Skidmore at Tipo 00 / Osteria Ilaria) and Sydney (in collaboration with Luke Burgess & Pasi Petanen at Cafe Paci). This will be a celebration of food inspired by traditional Apuglian cuisine alongside the minimal intervention wines from Gioia del Colle.
The wines will be an extended selection of current and back vintages from Guttarolo. Their local varieties, including verdeca, negroamaro, susumaniello, primitivo, grown with the highest respect to agriculture, vinified without additions and bottled without preservatives. Pure and delicious.
We will be offering a wine flight to accompany the food and a very deep and eclectic by-the-bottle selection.

Menu:
Potato focaccia, pickled sardines / Stuffed mushroom / Zucchini flower, buffalo curd / Heirloom tomato, burrata / Swordfish crudo
Spaghetti aglio e olio with sea urchin and bottarga
Chargrilled pigeon, chicoria livers, eggplant
Fig torta, ricotta, vincotto
Cost for food will be $95 for set menu, with wine/beverage charged on consumption.
