SANTO PALATO & LE COSTE come to OZ
GDM Fun Dining Series
To celebrate the end of summer, Giorgio De Maria of Fun Wines will join forces with rising star chef Sara Cicolini from Santo Palato Restaurant and the uncompromising winemaker Gianmarco Antonuzi from Le Coste, to bring a taste of Rome to Australia.
The latest in Giorgio’s itinerant series ofFun Dining, the gang will host lunches and dinners in Sydney (in collaboration with Flavio Carnevale at Marta), Hobart (in collaboration with Luke Burgess & Rodney Dunn at The Agrarian Kitchen) and Melbourne (in collaboration with Andreas Papadakis, Alberto Fava and Luke Skidmore at Tipo 00 / Osteria Ilaria). This will be a celebration of traditional Roman cuisine alongside the minimal intervention wines from Bolsena Lake.
The menu will be curated by Sarah Cicolini, celebrating iconic classics from her revered 35 seat Roman restaurant Santo Palato. Food will include classics like trippa alla romana, carbonara, porchetta, misticanza and maritozzo.
The wines will be an extended selection of current and back vintages from Le Coste. Their local varieties, including procanico, aleatico, greghetto (a local clone of sangiovese), grown with the highest respect to agriculture, vinified without additions, aged in a 500-year-old underground cellar and bottled without preservatives. Pure and delicious. Gianmarco Antonuzi, the master himself, will be here.
We will be offering a wine flight to accompany Sara’s food and a very deep and eclectic by-the-bottle selection. This collaboration is a dream come true for everyone.

The menu will be based on local and seasonal ingredient sourced by Luke Burgess & Rodney Dunn. Sara, Luke & Rodney will decide the menu at very last minute based of the best available.
Cost for food will be $145 for 5 course set menu, including Le Coste wine flight.
