Made exclusively from Pinot Noir, the fruit is gently destemmed before undergoing a short maceration of around six hours. The juice is then transferred to concrete, where native yeasts drive a slow fermentation lasting roughly twenty days. Once fermentation is complete, the wine is racked back into concrete and held there until the second fermentation begins. Following at least forty-eight months of maturation, disgorgement is carried out using the same wine for topping. The colour is a delicate, pale pink. Aromatically, the wine shows clear signs of evolution with nuanced tertiary notes, while the palate is defined by tension, harmony, and a pronounced mineral backbone.
