Knowing the exact time to press skin contact pinot grigio is an absolute necessity to retain the certain vibrant pink hue.  Hold it up in your glass to see the lucent glow, its a very remarkable sight.  Fresh & crunchy with an slight amaro after note.

Dario Princic, an iconic wine producer from the Friuli region.  Farmed organically since 1988, the soils are made up of clay, limestone & marl.  This Jakot spends around 20 days on skins and spontaneously ferments in large open chestnut cask and ages in very old barriques for 2 years before it goes to bottle.
